Paleo Pancakes

This recipe uses Birch Benders Paleo Pancake mix. The mix makes good pancakes, but this recipe takes them to the next level!

Ingredients:

  • 1/2 cup Birch Benders Pancake Mix (I usually use Paleo or Keto)

  • 2 tbsp ground flax seeds

  • 2 tbsp chia seeds (or you can use sub for 2 more tbsp flax seeds if you don’t want any crunch)

  • 2 eggs

  • 1/2 cup nut milk

  • Optional add-ins: 1/2 cup blueberries or 1/4 cup chocolate chips or 2/3 mashed super ripe banana

Directions:

  1. Combine all ingredients in a bowl except milk and mix with a whisk.

  2. Add milk in slowly until the mixture is slightly runny (you might need a little more than 1/2 cup). Let the mixture stand for about 10 minutes in the fridge to thicken from the chia and flax seeds.

  3. Pour batter onto a griddle or in pan and cook until golden brown. About 3-4 minutes on each side. I make 8 smaller pancakes from this recipe. If you want perfect pancakes, use something like this which I did not use for the above picture or they would be prettier :)

  4. Serve with salted grassfed butter and maple syrup. Yum!
