Rachel Mansfield - The Easiest No-Boil Baked Pasta Recipe

A round up of 10 of my favorite healthy recipes from other bloggers!

  1. Easiest No-Boil Baked Pasta Recipe by Rachel Mansfield - This recipe is so easy, you can literally throw it together in 5 minutes and put it in the oven. It’s also SO yummy that no one will know it’s healthy. The first time I made it I added sauteed garlic and onions, chopped spinach, and spicy Italian chicken sausage. I used Miyoko’s vegan mozzarella to keep it dairy-free. The second time I made it, I only used one box of pasta and added in two spiralized zucchinis, one small onion, 4 cloves of garlic, 1 can of chopped + drained artichoke hearts, and no cheese and it was still amazing! I recommend adding slightly more marinara than the recipe calls for - I like Rao’s marinara.

  2. Peanut Butter Twix (Grain-Free + Vegan) by Sadie Radinsky - I made these for Halloween last year, and they exceeded all expectations. The shortbread cookie is super crunchy, the peanut butter caramel is SO good, and you obviously can’t go wrong with chocolate.

  3. Life Changing Chocolate Chip Tahini Cookies by Kalejunkie - Chocolate chip cookies are my favorite dessert, and I would agree these are life changing. Make sure to follow her directions exactly!

  4. Sweet Potato Snacking Bread by shutthekaleup - Delicious, dense bread made with wholesome ingredients. Tastes like banana bread with a sweet potato twist. I added Lily’s chocolate chips and Maldon sea salt flakes on top.

  5. Pork Panko Crusted Fish w/ Spinach by Savoring the Flavoring - A genius way to bread things with no carbs or grains - pork panko! I made this recipe, but I didn’t have pork panko so I just ground up regular pork rinds and it still worked great. Also follow Katy for hilarious captions and tons of other delicious recipes.

  6. Best Vegan Apple Crisp by Minimalist Baker - This recipe is certainly not low sugar, but it’s made with whole foods and it is addicting! I’ve made it during Thanksgiving and Christmas and it’s always a big hit. I used grassfed butter in the topping instead of coconut oil.

  7. Erewhon Paleo Bread Re-Make by lilsipper - If you’re lucky enough to live near Erewhon and crazy enough to spend $16 on a loaf of bread, then you know how amazing it is. lilsipper’s recipe tastes really similar to the Erewhon bread, and it’s also so easy to make (are you sensing a theme here?). It toasts just like regular bread, and I love adding nut butter and homemade berry jam or making avocado toast with it.

  8. Whole30 Chicken Broccoli Casserole by Downshiftology - Whole30 approved creamy, cheesy casserole with no cream or cheese. I used a rotisserie chicken to make this, so it was super easy. Even if you don’t want to make this casserole, make her Vegan Alfredo Sauce. It’s amazing and would be great with spaghetti squash or Banza pasta.

  9. Paleo Cinnamon Rolls by Paleo Running Momma - I finally made these for Easter yesterday, and they were so good! In addition to looking and tasting amazing, they were surprisingly simple to make. We had no leftovers.

  10. Easy Instant Pot Shredded Chicken by Clean Eating Couple - Another great quarantine recipe for the family. You can use the cooked chicken for salads, soups, omelettes, tacos, etc. I like making chicken in the instant pot and using a jar of salsa instead of chicken broth when I want to make tacos or burrito bowls.
